Our take
Saki grew up in Shizuoka and whisks every bowl to order with a bamboo chasen, 5 g of single-origin ceremonial matcha per drink. The usucha shows the tea at its plainest, and the matcha tiramisu is the one to share.

Matcha sourcing
Business-providedMatcha Atelier is a small Japanese matcha stand inside MOAK Pancakes City Center on Jodenbreestraat, two minutes from Waterlooplein. We use single-origin, ceremonial-grade Shizuoka matcha from Otsuka Seicha, a Kakegawa tea house since 1869. Every drink gets a full 5 g, whisked by hand with a bamboo chasen in front of you. The bar is run by Saki, who grew up joining the tea harvest in Shizuoka and learned matcha from her grandmother, a tea-ceremony teacher. Start with a pure usucha to taste the tea itself, then try the signature matcha tiramisu: matcha-soaked layers and mascarpone in a hinoki masu box, a dessert you won’t find anywhere else in Amsterdam.
